Squacquerone cheese cappelletti, lettuce cream and crispy bacon
7 Luppoli La Fiorita.
Recipe ingredients:
(for 4 people)
150 g of fresh egg pasta
250 g of squacquerone cheese
A head of lettuce
A shallot
Extra virgin olive oil
1/2 liter of vegetable stock
A lemon
3 thick slices of rolled bacon
Salt and pepper to taste
Preparation:
Mix in a bowl with the help of a spoon the squacquerone cheese till homogeneous
Roll out the dough and wrap cappelletti with the appropriate scalloped moulds
Mince the shallot
Sauté gently in a saucepan
Bring to boiling salted water and blanch the defoliated lettuce
Cool and squeeze
It asaucepan flavors it with shallot
Blend all the ingredients adding a little vegetable stock and oil
Sieve and season to taste, flavor with a little lemon zest
Dice the bacon
Make it crispy in the pan and discard all excess fat
Cook the cappelletti in salted water
Drain
Presentation:
Spread the lettuce cream on the plate
Place the cappelletti
Add a few cubes of crispy bacon
To taste decorate with edible flowers
