Ravioli of Formadi Frant, 4 Luppoli Premium Lager, anchovies And raisins

BEER AS INGREDIENT:
4 Luppoli Lager.

Recipe ingredients:

(for 4 people)

Homemade egg pasta:
2 eggs and 2 yolks
200 g soft wheat flour type 00
Salt to taste

Stuffing:
150 g of Formadi frant cheese
150 g of Ricotta cheese
Salt to taste

Dressing:
500 ml of 4 Luppoli Premium Lager
4 boned anchovies
40 g of raisins
100 g of butter

 

 

Preparation:

Homemade egg pasta
Mix the ingredients until the mixture is homogeneous, then let it rest wrapped in transparent film.

Stuffing
Sieve and mix the ricotta and the Formadi frant, adjusting the flavor of the compound.

Dressing
Melt butter and anchovies in a frying pan, soak the raisins in water and on low heat reduce the 4 Luppoli Premium Lager.

Make ravioli
Roll out the pasta, make ravioli filling them with the stuffing and cook in salted water, then drain and pass them to the pan in which anchovies and butter have been melted, add the soaked raisins.

 

Presentation:

Place the ravioli on plates sprinkling them with the 4 Luppoli Premium Lager reduction and decorating with some soaked raisins.
