Fried sardines warbler-like
3 Luppoli.
Recipe ingredients:
(for 4 people)
750 g of sardines
4 anchovies
100 g of crumb
50 g of raisins
100 g of Green Pistachios of Bronte d.o.p.
50 g salted capers
50 g of black olives
Zest and juice of a lemon
an egg
150 g of breadcrumbs
Salt to taste
Pepper to taste
3 g of oregano
1 dl of olive oil to taste
1 l of oil for frying
Preparation:
Soak the raisins, toast the green pistachios of Bronte, desalinate capers, pit olives, chop the oregano, grate the crumb and the lemon zest.
Wash out and bone the sardines leaving intact the portion of the back. In a pan heats the anchovies with extra virgin olive oil, reduce them into a puree and add the grated crumb, toast for a few seconds; then add the soaked raisins, toasted green pistachios of Bronten, the capers and pitted olives, oregano, zest and lemon juice, pepper, stirring and adjusting the flavor. Spread a layer of the obtained compound on the sardines, close them rebuilding the real shape, keep in the fridge for an hour, then breaded with egg and breadcrumbs and fry in hot oil.
Presentation:
Serve in a basket with greaseproof paper.
