Fish soup of Ancona

Recipe ingredients:
(for 4 people)
2 kg of gutted and cleaned fish (3-4 kg of whole fish): Tub gurnards, Monkfish, Dogfish, Weever, Skate, Atlantic stargazer, Dory, Squilla mantis, Squid, Rockfish
250 g of EVO oil
50 g of vinegar
400 g of water
130 g of double concentrated tomato
30 g of onion
A clove of garlic
Salt and pepper to taste
Preparation:
Chop the onion and garlic
Dilute the tomato paste in water and vinegar
Clean and gut the fish
Place oil in a saucepan low and wide (about 40 cm in diameter)
Add the onion and garlic
Sauté
Add tomato
Boil
Combine the squid
Add the remaining fish (no squilla mantis)
Add salt and pepper
Cook for 20-25 minutes
During the last few minutes, add the squilla mantis
Presentation:
Serve hot directly in bowl
Accompany with toasted bread and EVO oil
