Cherry soup and sheep milk ice cream

Recipe ingredients:
(for 4 people)
Soup:
500 g of mountain clear cherries
700 g of sweet sligh sparkling wine
100 g of sugar
Star anise and cinnamon to taste
Ice cream:
800 g of sheep milk
Preparation:
Soup:Pit the cherries
In a copper saucepan with high sides reduce the wine with sugar, two star anise flowers and cinnamon stick
Let cool
Then add the cherries
Ice cream:
In a saucepan boil the sheep milk for 3 minutes
Add all other ingredients: fresh
Presentation:
Pour in the middle of bowl the cherries soup
Put on a cookie square
Add on the cookie the ice cream
Decorate with dark chocolate flakes
