1 fillet of amberjack of about 600 g
1 brunoise reduced shallot
50 g of extra virgin olive oil
10 g of soy sauce
15 cl of reduced 9 Luppoli Belgian Blanche
Sprouts and salad to accompany
Preparation:
Scallop finely the amberjack fillet
Lay the scallops on the plate to create a disk
Mix oil with soy and 9 Luppoli Belgian Blanche
Add shallots
Presentation:
Create a small ball with salad and place it in the middle of the disc
Drizzle with the obtained sauce
