Scapece zucchini and fried anchovies

Recipe ingredients:
(for 4 people)16 fresh anchovies
2 green zucchini
200 g of breadcrumbs
2 Eggs
White vinegar to taste

Rice flour to taste
Peanut oil to taste

Preparation:
Gut and bone anchovies being careful not to split themBreak the eggs into a bowl and beat
Chop the parsley and add it to the breadcrumbs
Close anchovies on their own and dip in rice flour, then egg and finally in bread
Fry in peanut oil keeping them entire
Presentation:
In a bowl place the zucchini
Add the anchovies and serve with sprigs of mint
