Roasted Marrow with orange and anchovy leakage

Recipe ingredients:
(for 4 people)400 g of veal marrow
4 oranges of Ribera d.o.p.
grated zest of an orange of Ribera d.o.p.
anchovy sauce to taste
salt to taste
pepper to taste
extra virgin olive oil to taste
Preparation:
Clean up the orange till the flesh, saving the zest that will be grated. Cut the marrow in flaps and roast in a pan.
Presentation:
Place the slices of marrow in the pot,on the side place the slices of orange of Ribera, grate orange zest and season with anchovy sauce, salt and pepper.
