Lamb chops with red onion of Tropea
BEER AS INGREDIENT:
6 Luppoli Bock Rossa.

Recipe ingredients:
(for 4 people)
8 lamb chops
2 red onions of Tropea, Calabria i.g.p. cooked under the ashes
½ l of 6 Luppoli Bock Rossa
4 bergamot
200 g of sugar
200 g of water
Salt to taste
Pepper to taste
Preparation:
Peel the bergamot, squeeze and extract the juice, mix it with 6 Luppoli Bock Rossa and reduce it to obtain a sauce. Blanch the rinds and then candy with a syrup of sugar and water. Grill the lamb chops over an open fire fueled by charcoal. Halve the red onion and season with extra virgin olive oil, salt and pepper.
Presentation:
Place 2 lamb chops on each plate accompanying them with half of seasoned Red Onions of Tropea and add some sauce of bergamot juice and 6 luppoli Bock Rossa.
