Catalan Lobster

Recipe ingredients:
(for 4 people)
1 lobster of about 800 g
2 fresh white onions
3 ripe tomatoes
80 g of Sardinian EVO oil
A lemon
Basil leaves to taste
Salt and pepper to taste
Preparation:
Tie the lobster on a wooden stick so that it is fully extended
Bring to boil a pot of water big enough to contain the lobster
Cook it for 12 minutes
Let it cool
Gently open the shell and remove the tail without breaking it
Get medallions
Remove the coral from the head, place it in a bowl, emulsify with a little olive oil, lemon juice and salt to get a smooth sauce
Finely chop the onions, tomatoes and basil, toss in a bowl with oil and salt
Presentation:
On a plate create a layer with onions and tomatoes
Place the lobster medallions
Season with the sauce previously obtained from coral
Serve with carasau bread
