Recipe ingredients:
33 cl of 6 Luppoli Bock Rossa
80 g of Bagoss cheese aged 36 months
1 l of liquid nitrogen
Preparation:
Pour the 6 Luppoli Bock Rossa in a container large enough and emulsify with an immersion blender to obtain a soft mounted foam, then collect small pieces with a spoon, pour in liquid nitrogen, let soak for 30 seconds and then remove them.
Presentation:
Place the croquettes made with 6 Luppoli Bock Rossa on ceramic spoons and sprinkle with petals of Bagoss.
