Croquette of lentils of Castelluccio and cotechino sausage

Recipe ingredients:
(for 4 people)
100 g dried lentils of Castelluccio of Norcia i.g.p.
50 g of cooked and shelled cotechino sausage
50 g of breadcrumbs
An egg
20 g of flourwheat flour type 00
salt and pepper to taste
1 dl of peanut oil
Preparation:
Boil and sifting the lentils of Castelluccio of Norcia obtaining a puree, then add the cotechino sausage grainy, stir the mixture and adjust salt and pepper. Form a few balls, dip in flour, then in beaten egg and finally in breadcrumbs, now fry it until golden brown.
Presentation:
Serve on tissue or straw paper.
