Trout of Rieti with leeks fondue

Recipe ingredients:
(for 10 people)
10 fillets of trout of Rieti weighing about 140 g each
80 g of butter
2 newly leeks
5 g of butter
5 dl fresh cream
Preparation:
Trim the leeks, wash and cut into julienne strips, then make them sweat in a pan with a small nut of butter, then sprinkle them with water and reduce, then add the cream and let the mixture reduce further.
Flake the trouts, empty them, wash them well, obtaining fillets and sauté with the remaining butter.
Presentation:
Place the trout on the dinner plate, side the leeks fondue.
